Wish kid Simon creates new flavor for Doc Burnstein’s

The Make-A-Wish Foundation is partnering up with Doc Burnstein’s Ice Cream Lab for World Wish Day.

It’s the non-profit’s annual fundraising campaign to help grant wishes to local children with life-threatening medical conditions.

This year, Doc Burnstein’s is working with 10-year-old Simon, who’s created an original concoction called “Plasma Swirl Crunch.”

The 2019 Scoops for Wishes featured flavor is a mixture of cake batter ice cream, Nerds candy and a swirl of blueberries.

It’s inspired by Simon’s favorite movie series: “Star Wars.”

Last year, Doc’s raised $20,000 for Make-A-Wish Tri-Counties, and was able to fund four kid’s wishes.

Monday from 4 to 5 p.m., Simon will be at Doc Burnstein’s San Luis Obispo location, 860 Higuera St., while his favorite new creation is scooped up.
